Hi, I’m Brian and I help people achieve their fitness goals through better meal planning and nutrition.
My clients are successful in other areas of their lives. They’re smart enough to figure this out themselves but choose to leave it in the hands of an experienced professional. I’ve been meal prepping for over 18 years and in that time I went from a tubby 22% body fat down to a lean 11% that's easily sustainable.
I'm able to achieve results because I keep nutrition 100% on point 6 days a week (weekends are flexible - we all need to keep our sanity)
My meal prep takes roughly 2.5 hours on a Sunday morning for the entire week and I get to eat foods
I love…and I LOVE to eat…almost as much as I love to cook. But this took me years of trial and error and it's NOT just about the meals.

dime a dozen online these days.
The question is how to fit them all together to complement your schedule and lifestyle. Well, that's what I wanted to talk to you about today.
Growing up in Europe I was surrounded by home cooked meals, immersed in every variety of flavors imaginable. Hearty winter stews, refreshing summer soups & birthday cakes all made from scratch by my parents & grandparents. Food was something to savor & appreciate, not scarf down in a hurry
Fast food chains were non-existent in post communist Europe and eating out at a restaurant was unthinkable, pricey and usually reserved for VERY special occasions. Food pretty much meant sitting around the table eating a home cooked meal. Thinking back, I'm eternally grateful for that.
When I got into nutrition & fitness I didn’t want to give up my love of food. So my goal was to convert the recipes from my childhood and make them to fit my macros. And so the journey began.
I consulted the only experts I knew - My mom and grandmother (Couldn’t ask for better mentors really) who took me from humble beginnings to today's grandiose endeavors. This gave me a solid foundation and set me on a good path. I was able to cook meals I loved and get in shape while doing it. It wasn't easy or simple but it worked… Awesome!
Now I know what you're thinking.
"Cool story bro, but what's with the fat "before" picture?"
Well my friend, knowing how to cook is only half the battle. Falling off the wagon can still creep up on you. That's because the problem is always consistency!! If diet is 80% of your results and we know consistency is key, why is it so damn hard to follow? Why do we always stumble on our fitness journey? Let me tell you a little story…
THE GUT-PUNCH
OF REALITY
I remember feeling a pit in my stomach as I sank in the chair, staring at my phone in disbelief. The pictures from last week's Christmas party came in & I was mortified.
I've gotten so out of shape that I literally couldn’t recognize myself. Even worse, these pictures were sent out to everyone in a group chat…and everybody knew I was into healthy eating but haven't seen me in months. I felt embarrassed, defeated and angry at myself.
How in the hell did this happen?
I knew how to eat healthy, I loved to cook and have gotten fit before. How did it slip away from me? Well, if you’ve ever meal-prepped before you know the usual pitfalls all too well.

It's not hard at first but quickly becomes annoying & you soon start to feel like a slave to the kitchen

Washing dishes, portioning and cleanup becomes the biggest pain in the a$$. The elephant in the room no one talks about or accounts for in recipes.

Feels like you're always running around & rushing. Trying to find meals that fit your numbers, hunting down ingredients in the grocery store, getting your cooking done on time…only to have to do it all over again next week. It's exhausting!

Nothing stays fresh. If you cook for the whole week, by day 3 the chicken tastes like cardboard and steamed veggies start smelling like farts soon after. You feel nauseous just thinking about downing another chicken breast.

Food tracking apps are great in a pinch…but take way too much time & effort to use consistently.

When improvising, meals end up either way UNDER or way OVER your calorie goals. You then feel defeated the week after when progress stops or worse…regresses.

You tried keeping it simple (chicken, veggies and rice) but get bored of the food quickly. No matter how resilient you think you are, time chips away at even the best of us. We NEED variety

These are all excuses of course but if you’ve ever fallen off the wagon, you know it's never a single slip-up but the accumulation of many things. Combine these excuses with a horrible week at work, life’s unexpected challenges, a bout of “things just not going your way” and suddenly giving up or taking a break sounds very tempting.
By the time Christmas rolled around, consistency had gone out the window - I would eat decently during the week but binge irresponsibly on the weekends (sometimes even on weekdays). I was in a bad place mentally and was making every excuse in the book justifying my bad decisions with food. Plus it's the holidays right? But these were just excuses.
The truth is, the tedious nature of

can become too much
I remember thinking "I have to figure this out...this has to be ridiculously simple!" Knowing how to cook healthy is useless if I can't do it consistently.
So I sucked it up and took stock of the damage. I took weight & tape measurements along with pictures and I'm not gonna lie...it was bad!
Meet "Tubby Christmas Brian" (Ho-Ho-Holly Crap)
"Well, its worse then I thought" But I put my head down and got to work, tackling meal prep from a whole new perspective!
Everything needed to be reworked, simplified & mercilessly efficient.
And then a light-bulb went off

I found inspiration in the least expected of places…my job. I'm a video editor by trade & routinely work with ungodly amounts of footage. Efficiency is the name of the game.
I once had to edit 75 hours of footage down to a 30 second commercial that was due in a week. It was a monumental task, but I delivered on time to a happy client. I’ve been doing this for over two decades. I don't backslide, fall off the wagon or slip-up…if I don't deliver, I get fired. So how do I have the discipline here but not with cooking?
There's gotta be a system here
I can replicate in my Cooking!
So I approached meal prep like media production - Instead of hours of raw footage I had ingredients. Instead of a script I had recipes. And instead of a production schedule I had a cooking schedule. The similarities were striking and I quickly saw patterns emerge.
Once I had a plan I immediately began building my new Advanced Approach to meal prep. Over the coming months I stress-tested everything and repeatedly put it through the ringer.
This HAD to be ROBUST!

First I organized my recipes into stack-able "Time-Blocks". This gave me an easy to follow roadmap for every week’s mealprep & guaranteed to keep sessions short. It made cooking multiple meals a breeze to execute on time. (This was a HUGE game changer! More on this later)

I created a "Smart Grocery Hack List" that organizes ingredients by aisles and gets automatically sent to my phone so I don't even have to think about it. Shopping takes me just 15 min for the whole week now!

I designed a "Nutrition Spreadsheet" for every meal plan, making each ingredient, amount & macros adjustable. Suddenly I could modify any recipe’s Proteins, Carbs & Fats to fit my goals. This opened up a whole new world of variety & flavor!

I made a "Cravings Whishlist" for any snack or food cravings that hit me during the day and could easily work them into next week's meal plan so I didn't feel deprived

I developed a "Progress Tracking Guide" that takes literally 5 minutes a week and let's me make adjustments to stay on track even with the occasional Friday night out with friends (a guide I give to all my clients)

I came up with a "RED BUTTON Emergency Guide" for those days when everything turns to S#*t and you simply can't cook or get to your meals. Combine this with my tracking guide and you're covered for almost any situation life throws at you (another crucial guide I Provide all my clients)

And most importantly, I came up with a "Hard Reset Method" to turn around any unwanted gains from vacations and get back on track as quickly as humanly possible. It ain't easy but good lord did it work!
After months of hard work

the results surprised even me!
I think it's safe to say "Tubby Christmas Brian" from before would probably be impressed.
I finally had a huge weight off my shoulder (pun intended). And not ONCE did I feel deprived or overwhelmed! I had a reliable system I could lean on, trust the numbers and follow on autopilot. I knew exactly WHAT to eat, WHAT to buy, HOW to make it, WHEN to cook and HOW long it would take. But most importantly…it was all foods that I loved to eat!
Grocery shopping was a breeze and I knew exactly how to fit cooking into my schedule so I could enjoy my weekends. My fridge greets me every morning filled to the brim and I have "grab-n-go" meals for every day I can heat up anywhere.
With my “RED BUTTON Emergency Guide” I could power through those long work days or busy weekends and not stress about knowing what to eat. With my new “HARD RESET METHOD” I could anticipate vacation gains and not freak out. I knew EXACTLY how to correct it and HOW LONG it would take.

So, am I the right Meal Plan Coach for you?
I love coaching and have accumulated over 18 years of experience meal prepping. I'm a geek about food, cooking and nutrition so you don't have to be. But I’m only good at what I do because I don't work with everybody.
Who do I work with?
I work exclusively with people who already know how to cook or at least have a basic knowledge of cooking. Ideally they have a little experience with meal prep as well. You should have a basic understanding of your calorie needs and amounts your aiming for based on your specific goals (cutting, bulking or maintenance)
If you have a rough idea of your macro breakdown, that helps but if you don't, we can figure that out once we start working together, track progress and make tweaks accordingly.
What you will need to do
Cooking for the whole week can be daunting, but the biggest shortcut is setting things up properly to make it simple and easy enough to sustain in the long run. This is where I come in.
Typically, clients cook one day of the week. (Sat or Sun morning) You’ll need to allocate roughly 2.5hrs for cooking and about 15 minutes for groceries the day before. That's a grand total of 2hrs 45min to cook Breakfast, Lunch, Dinner and portion all of your snacks for the whole week!
If you don't already have an Instant Pot this is a must. It's around 70 bucks at target, brutally simple to use, saves hours on cooking and makes almost everything juicy.
You’ll check in once every week via email or phone call (depending on your preference) where we will discuss & review last week's meals - you get to provide feedback and I’ll make adjustments accordingly
How the coaching experience looks

Before we commit to each other, before any money exchanges hands we need to determine whether we are a good fit. First we’ll discuss your food preferences, your goals, cooking skills, time availability and make a plan. If we agree on things, we will move forward.

Every week you will receive a fresh batch of new materials (Personalized meal plan, Itemized Grocery list and your Cooking TimeBlock schedule)

We will check in at the end of every week with your progress, experience, feedback and questions. (this can be phone or email depending on your preference)
Your job is to adhere to the meal plan we’ve agreed upon. My job is to help you do that and tweak things if necessary to stay on target.
How much does meal plan coaching cost?
I’ve heard of people charging as little as $75 a week for Meal Plans and up to $350 per week.
$350 seems a bit excessive but you get what you pay for I suppose.
My Meal Plans cost between $100-$250 per week, depending on which package is right for you. Discounted prices are available for multi-week bundle deals.
I appreciate this may be too expensive for many people.
